La Regina Farm (The Queen's Farm), which runs the Agritur Malga Ritort in St. Antonio di Mavignola (near Madonna di Campiglio, Val Rendena), is popular within this area for the intense production of milk, derived from the local Alpine cows. The breeding of the cattle follows the principles of tradition and bases the feeding of animals on the dried natural hay of the area. The wide range of flower perfumes gives the hay a peculiar mix of flavours, then tansferred in the delicious home-processed cheese.
The milk is obtained in the stables, then tansported in the few meters farm dairy, where the "casari" (farmers who process the milk) produce fresh cheese or more mature cheese. The two have different flavours. The whey of the dairy is recycled, then used in the feeding of pigs, from whose meat delicious cold cuts are obtained. Cheese and meat are on sale in the farm's shop, together with the local honeys and other typical products of the near farms.
The Farmhouse is open to visitors who want to know the secrets of animal breeding and products transformation. If booked in advance, guests can enjoy guided visits in the Teaching Farm: classes, organized groups and families are welcome.
